This is an all time summer Favourite. But can be eaten in winter too, I mean who makes up these rules except for us!! Gooooo enjoy that marinate guys!! Instead of grilling these baby skewers on a BBQ, shove it in the OVEN!
You can eat this with salad, in a wrap, with rice, grilled veg! It goes with everything. I serve it with my home made garlic sauce, fries, and a salad with lebanese/pita bread on the side. If I am on a diet, I prep and cook the chicken which I would then add to my salads. Chicken can last in the fridge up to 4 days. Sheesh Tawook is really popular in the Middle East. It originated in Turkey and spread all the way to the south.
The three key ingredients in the marinade are; garlic, lemon, and yoghurt. This is what makes the chicken tender and juicy.
7 Cloves of crushed garlic (or more if you love garlic)
juice of 1 squeezed lemon
3 tbsp of yoghurt
1 tsp of salt
2 tbsp of tomato pureé
1 1/2 tbsp of Black pepper
1 tsp of paprika
1 tsp of ground ginger (if you don’t have this, you can grate fresh ginger)
a drizzle of olive oil
dried oregano or thyme
I prefer diced chicken breast, but once again in the summer time I add this marinade to chicken legs and thighs.
Mix the marinade into the chicken cubes and cover to put in the fridge overnight or 4 hours before cooking time. Put it on skewers and grill until cooked, or if you are putting this in the over let it cook for 45 mins on 200 degrees. Place the skewers in a pitta bread with a few salad leaves, fries, salted pickles, and garlic sauce.
